Recipe: Crock Pot Chicken Athena

Feb 8, 2008 Author: Elizabeth | Filed under: Food, Health & Fitness, Recipes

In my recent attempts to take control of my health and start eating things that are tasty and good for me, I’ve been trying out some new recipes. I definitely recommend SparkRecipes.com for healthy, easy meals that everyone can enjoy (and while you’re looking around there, don’t forget to check out SparkPeople.com and use MISSWISABUS as your referrer if you sign up!). This particular recipe was submitted by TABBYKAT75 who seems to be the queen of slow cooker meals. I made it tonight and it is yummy!

Crock Pot Chicken Athena
Cook time 3-7 hours
Serves 6

Ingredients
6 boneless, skinless chicken breast halves
3 cloves garlic, minced
2 medium onions, chopped
1/4 cup freshly squeezed lemon juice
1 Tablespoon balsamic vinegar
1/3 cup Kalamata olives, pitted and chopped
1/3 cup dried tomatoes, drained and roughly chopped
1 teaspoon salt, optional
2 Tablespoons chopped fresh basil
1/3 cup crumbled Feta cheese
1/4 cup capers (optional)

Directions
Place chicken in a crock pot and add the next 7 ingredients. Cover and cook on low setting for 7-8 hours (or on high setting for 3 1/2 to 4 hours) or until chicken juices run clear and chicken is completely cooked. Place chicken on a large serving platter and sprinkle with basil, Feta cheese and capers. Serve on top of pasta.

Friday’s Feast #5

Feb 8, 2008 Author: Elizabeth | Filed under: Friday's Feast, Meme

Friday’s Feast is down today due to technical difficulties, but a nice fellow by the name of Gabriel provided some questions for regular posters to use. So, here goes!

Appetizer
What would be your most treasured memory of your childhood? I have a lot of treasured memories, but the one that just popped into my head was going crawdad fishing with my brothers, one of my cousins, and Granny. Granny would get some raw bacon and we’d tie it to a piece of string, which was tied to the end of a stick. We’d head down the road to a place near a pond where some water had collected after a good rain and there we would stand, probably not any longer than an hour because I remember my brothers’ attention spans at that age. We did catch a few, but I don’t remember what we did with them. I know we didn’t eat them. Not that I would have had a problem with that.
Soup
When was the last time you just ‘bit your tongue’? I bite my tongue every time I’m with my family. At least once. But most of the time I don’t bite my tongue.
Salad
Name that silly fact about you that was unknown…until now. I really enjoy listening to Tom Jones.
Main Course
You’re a superhero, but with ‘non typical’ superpowers. What would your super powers be, and what would you like to be called? Superfast ability to read and comprehend, the ability to speak and understand all languages, and umm…how about YOU suggest a name for me?
Dessert
World Cup final, Olympic Games, Superbowl, World Series, NBA finals, Stanley Cup… which one would you like to play in? Duh, the Winter Olympic Games where I would be the better looking half of a pairs skating couple.

So glad that this part of my life is over. Not that I was ever hanging out at bars picking up strange, potentially dangerous men.

Internet > bars.

Friday’s Feast #4

Appetizer
What is your favorite kind of cereal? Golden Crisp — NOT Smacks. But I don’t eat it very often because it’s not the best for you.
Soup
When was the last time you purchased something for your home, what was it, and in which room did it go? Hmm…that’s difficult. I can’t think of any large, decorative items at the moment, so I’ll go with my candle warmer. And it moves around as I see fit.
Salad
What is the funniest commercial you’ve ever seen? I like Sonic commercials. I need to be on Sonic commercials. I am very funny and I live in Oklahoma, the location of the headquarters. Please, Sonic, call me!
Main Course
Make up a name for a company by using a spice and an animal (example: Cinnamon Monkey). Basil Bats. I really like that.
Dessert
Fill in the blank: I haven’t ______ since ______. I haven’t seen Kevin since Monday. Boring, I know, but it’s important to me and it’s the first thing I thought of.
